Tofu & Veggie Stir Fry

I need to make this again because WOW it was so delicious! This stir fry makes for the dinner dish and can be excellent for meal preps!


  • Half block of Trader Joe’s Organic Tofu
  • 1/4 cup Jasmine Rice (makes 3/4 cup cooked)
  • 1 Medium Green Bell Pepper
  • 1/4 cup Cashews
  • 1/2 cup Trader Joe’s Stir Fry Sauce
  • 1 cup Spinach
  • 1 cup Mushrooms
  • 1 cup Broccoli

Begin by slicing your tofu block in half and leaving out to “dry” so as much liquid will drain. A tofu press is preferred for these things but not required! While waiting, chop up your veggies. Once tofu is dry, cut into cubes and place in an air fryer on 400 for 15mins. While doing this, boil your rice on the stove. Once both items are done, place both in a large skillet. Add veggies and cashews. Cover and stir occasionally. Once veggies are tender and cooked down, add in sauce and mix. Allow to cook for a few more minutes than remove from heat. Serve or meal!!
